If you are using Hosted Exchange mail server, there are a couple of ways to set an Out-Of-Office message, and a way to setup automatic forwarding.
WEBMAIL
If you go to your WebMail you can set the Out-Of-Office message as show here:

MAILBOX ADMINISTRATION
If you go to your MailBox Administration website you can set up Forwarding as well as an Out-Of-Office message, as show below:
